GTase activity is measured as the quantity of insoluble glucan produced in 1 mL over a period of 24 h. The Lineweaver–Burk equations for control, glycyrrhizin, and ellagic acid were 1/V = 4.52 × 1/[S] + 4.58, 1/V = 6.90 × 1/[S] + 7.40, and 1/V = 5.38 × 1/[S] + 9.51, respectively. The values were calculated from three independent experiments.
